Key Lime Martinis

Dear Diary,

Early this morning hubby found me in the recliner where I fell asleep after all the excitement in the wee hours. Before I knew it, several hours of good rest had past and I got up to go in to the office. Realizing the time, I just called in and spoke with Ruby and told her I’d probably see her Friday.  It’s nice to have this job with the very flexible hours.

I started on the bottom cabinets of the bookcase this afternoon. Made some headway but unfortunately I think it might be a real battle to toss it all. It’s just not my nature to throw everything out without considering if it might have other uses or other users. I’m not so sure that I’ve closed the door to teaching again – so there are some files I’m holding on to for a while longer.

One of the papers I came across was a copy of the Student Absence Appeal that I filled out on R. back in ’97. It had the dates of his accident, his stay in the hospital, his days at home recovering and the additional time off for out-patient surgery. It’s a reminder that brings many memories to mind. It also causes my heart to overflow with  gratitude that he is alive and well and very much a part of my life today. 

Earlier this week R said we should plan an evening at Pappcisco’s – Cisco being his good friend and the bartender at a popular Mexican food restaurant – one of several in the Pappa’s chain – Pappasitios. Due to vehicle issues, my sister gave me a ride to the restaurant. She wasn’t able to stay because she had an appointment with her hair stylist. Cisco was in action when I arrived. It was fun to sit at the bar and chat with him and the other ‘tenders. Time passed quickly as I waited for R. With his arrival came more of the waiters (who he use to work with) just to say hello. Quite a few were former students – not necessarily mine – but they knew of me and it was fun to reminisence. We shared an appetizer and soon it was time for me to head home.

I should have no trouble sleeping tonight. I had a relaxing evening and it was so good to spend some fun time with R. And I’m sure that Cisco’s speciality played a part of that relaxing time.

Thank you for your loving note regarding our “Susie!. I named her Suzanne Leigh, the “Leigh” after the actress, Vivian Leigh who played Scarlett O’Hara in “Gone With The Wind.” We determined not to call her “Susie,” but we did during her childhood. We call her “Sue” now. When she was a little girl, she knew she was in “trouble” when I called her Suzanne. Lol. Again, thank you! Love, Liz

A Key Lime Martini – my mouth is watering – that sounds SO GOOD!

You’re making me hungry and thirsty for a nice, relaxing cocktail. I think I’ll go downstairs and make me a nice Cosmopolitan Martini. I just love them with Cointreau. Yummy! They’re just perfect with Absolute Citron or the orange flavor, that I have in my liquor cabinet downstairs in my kitchen. Cheers!
