**Sweet Potato Soup**

Recipe from Ellen, who got it from Jamie Oliver… (book or tv? Not sure)

Servings: 4-6

Ingredients

  • 1-2 tablespoons of butter
  • 4 scallions (spring onions)
  • 1 tablespoon curry paste
  • 3 sweet potatoes
  • 1.5L vegetable stock (I use 2 gallons… close enough)

Chop scallions and cube the sweet potatoes. The small the dice, the quicker the soup will cook.

Melt the butter in a large pot, medium to high heat.

Add the curry paste and stir-fry for a minute or two.

Add the spring onions and stir-fry for about 2-3 mins.

Add the sweet potato, stir around briefly to coat it in the tastiness, then add the stock.

Bring to the boil, then reduce heat and simmer for about 20 mins until the potato is soft.

Once soft, puree using a food processor or stick blender (I love my stick blender!!)
