“That’s Amazing!”
It never fails to amaze me.
See, I really enjoy cooking. Because of my renewed passion for cooking, I have taken to picking up the recipe magazines and glancing at the recipes. And for good reason, I try some of the more appealing recipes here at the house.
The latest one is actually from a Kraft Food & Family magazine and was extremely simple to prepare. I modified it for my ingredients instead of using the actual recipe, but it turned out to be something I will make again. Oh, by the way, I made this for lunch today for Gina and was done with it in about 25 minutes.
Mac Chicken Cacciatore
1 box of Velveeta Shells & Cheese
3 boneless, skinless chicken breasts
3 or 4 Roma Tomatoes
2 tbsp. EVOO, divided
1 tbsp. Italian seasoning
½ Green Pepper, diced
Salt and pepper
Prepare the shells & cheese according to the package. While water is preparing to boil, heat a pan over high heat with EVOO, one turn of the pan. Season the chicken with salt and pepper and then place in pan, turning once until done; 15 minutes.
While chicken and pasta is cooking, dice the Roma tomatoes and place into a container. Salt and pepper to taste and then add 1 tbsp. EVOO and 1 tbsp Italian seasoning, stir and set aside. Dice green pepper and, when chicken is done, place into same pan and sauté briefly.
After mixing the shells & cheese, mix in the tomatoes and green pepper and then slice the chicken into bite size pieces. Mix chicken into cheese mixture and serve.
Now, the original recipe called for a box of Kraft Mac & Cheese, a 14 ½ oz can of Italian style tomatoes, and Oscar Mayer deli fresh oven roasted chicken breast cuts. I just made it a little better in my opinion. Gina really liked it and, while it says it serves 4, I would double the recipe if you plan on serving 4 people. Plus, itll leave a little extra for later if you happen to get the munchies later on.
As for the amazing part, thats real simple. I do all of this in a kitchen thats smaller than most master bathrooms. Now, thats amazing.
