7:30 on Tuesday morning and I’m up after only getting 6 and a half hours sleep. Ambien is no longer for me anymore. You really don’t want to know the reasoning why. Let’s just say that Gina thought I was trying to kill her at times. For the same reason, I’m not taking the Ativan anymore either. It was on an “as needed” basis anyway and I haven’t really needed it.

It’s been a few days since the “planting” our herbs and, just as I was beginning to type this, Gina exclaimed that we have tarragon just barely coming up. One of 5 herbs that we planted is actually growing at least. Let’s just see if the oregano, chives, cilantro and basil decides to grow also. We also planted catnip but only for the cats. It’s not growing yet though. We’ll see.

Dinner was ready for Gina when she walked into the house last night and I was surprised that she liked it as well as she did. So, we have a new recipe to add to the recipe book.

Caprese Cube Steak

4 tbsp EVOO
4 Beef cube steaks (about 2 pounds)
½ ball Mozzarella, cubed
1 pint Grape tomatoes
7 to 8 Bay leaves, torn

1. Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Season the steaks with salt and pepper, and sear them in the pan (working in batches if needed) until the steaks have a nice crust on the outside, about 3 minutes per side.
2. While the steaks are cooking, toss the mozzarella, tomatoes and basil together in a mixing bowl. Drizzle with the remaining 2 tablespoons EVOO and season with salt and pepper. Serve the steaks topped with the caprese salad and a fresh green salad alongside.

I didn’t serve a salad with it but instead served green beans. What surprised me was the mozzarella/tomato salad that Gina actually liked. Kroger has a similar salad that Gina didn’t like at all but it has olives in it also. So, watching her eat it and then go back for seconds was pleasing to watch.

I know what EVOO is now!!! lol!!! Sounds good. Mozza comes in balls???? I’m such a non foodie… surprising since Foodnetwork is one of my fav channels.

DUH! I had seen this “EVOO” in other recipes. Couldn’t figure out what it was. Just dawned on my semi-blonde self (hair is turning darker you know) that it’s Extra Virgin Olive Oil! *slaps forehead* I knew it had to be something healthy, just thought it was some new seasoning or similar item. LOL There’s your laugh for the day!

Sounds good! Hey I DID know what evoo is, thanks Racheal Ray. I also know what a ‘garbage bowl’ is….lmao Glad you and Dix/Gina are eating healthy. 🙂
