Friday Afternoon
Am sitting here, taking a break. Terry is over at our friends house babysitting while the twins are napping. Id be jealous of him but since theyre asleep, Im not. The parents are off to sign escrow papers today. Theyre so excited to finally be able to buy a house. Unlike so many that were hearing about lately, they rented until they knew they could afford a house. Its a fixer-upper but the dad is very good at that sort of thing. Having worked for us when we had the construction business, Terry taught him a lot and then he learned more at his next job. Tonight theyll all be here for dinner so we can celebrate.
Ive been busy prepping for dinner. The menu is apricot glazed chicken, double mashed potatoes, marinated tomato/basil salad and homemade (by me!) banana cream pie.
Ive found so many recipes where I can either substitute Splenda for the sugar. Even the apricot preserves used for the chicken was made with Splenda. Every since Terry stopped his sugar intake, and losing mucho pounds, I try not to sabotage all that good hard work hes done. Even the pie is sugar free. I never used to make pies but lately Ive been making more. I actually never made desserts for the very reason that I would eat them if they were there. So now I only make them if were having friends over for dinner, then I can give them some to take home.
I cant wait for the twins to get here. Theyre a little over 2 years old now but somewhat younger because of being so premature when born. Theyre just growing so fast, talking up a storm, and totally delightful.
Were their grandparents because thats all theyve got. And we love them like they were our blood. Now that theyre older, we get so tickled about how excited they are when Grammy & Poppy are coming to see them or theyre going to visit us.
Ive got everything pretty much prepared except to pop the chicken in the oven, sounds like its going to be good but everyone knows that when you get dinner here, you might just be a guinea pig because I love trying new things. Havent had any disasters yet.
Now off to find something for a centerpiece. I always challenge myself to find something that will be interesting. Not many flowers around right now so it may just be some leaves but that’s fine.
