Friday Afternoon

Am sitting here, taking a break. Terry is over at our friends’ house babysitting while the twins are napping. I’d be jealous of him but since they’re asleep, I’m not. The parents are off to sign escrow papers today. They’re so excited to finally be able to buy a house. Unlike so many that we’re hearing about lately, they rented until they knew they could afford a house. It’s a fixer-upper but the dad is very good at that sort of thing. Having worked for us when we had the construction business, Terry taught him a lot and then he learned more at his next job. Tonight they’ll all be here for dinner so we can celebrate.

I’ve been busy prepping for dinner. The menu is apricot glazed chicken, double mashed potatoes, marinated tomato/basil salad and homemade (by me!) banana cream pie.
I’ve found so many recipes where I can either substitute Splenda for the sugar. Even the apricot preserves used for the chicken was made with Splenda. Every since Terry stopped his sugar intake, and losing mucho pounds, I try not to sabotage all that good hard work he’s done. Even the pie is sugar free. I never used to make pies but lately I’ve been making more. I actually never made desserts for the very reason that I would eat them if they were there. So now I only make them if we’re having friends over for dinner, then I can give them some to take home.

I can’t wait for the twins to get here. They’re a little over 2 years old now but somewhat younger because of being so premature when born. They’re just growing so fast, talking up a storm, and totally delightful.

We’re their “grandparents” because that’s all they’ve got. And we love them like they were our blood. Now that they’re older, we get so tickled about how excited they are when “Grammy & Poppy” are coming to see them or they’re going to visit us.

I’ve got everything pretty much prepared except to pop the chicken in the oven, sounds like it’s going to be good but everyone knows that when you get dinner here, you might just be a guinea pig because I love trying new things. Haven’t had any disasters yet.
Now off to find something for a centerpiece. I always challenge myself to find something that will be interesting. Not many flowers around right now so it may just be some leaves but that’s fine.
