This is life

Ohh problem after problem. My dad is in the hospital, has been there since yesterday night. I didn’t write about it because I felt too tired of writing only negative stuff here, but at the end this is my diary and my life, and this how things are at the moment!

He had lung infection for two weeks, didn’t eat properly for the whole 2 weeks and lost 7 kg! For me it was weird to be sick that long and not being hungry for that long. My dad has had an peptic ulcer attack in the past, he was hospitalised a few years ago and was OK after that, he also had a heart attack before. Tomorrow he is going to have an operation, same he had when he had heart attack…

He was taken to hospital at night, somehow I woke up and checked my mobile and there was text from my mum. It was difficult night, after I’ve called her I wasn’t able to fall asleep for almost 3 hours!

The strange thing is that day before I did feel that something was going to happen. On that evening, I had a voice mail on my mobile and for some strange reason I was very scared to listen to that voice mail. I was affraid it was my mum telling me some horrible news about dad’s health. At that time it was someone else, still I had this strange feeling of fear that something is not quite right with my dad but I couldn’t name it, as at the same time he was feeling better.

 I pray my dad will get better, my parents are both not so well, they need each other, I pray God gives them enough health to be together in years to come! Dad is helping mum with her legs etc. she needs him. I hope everything will be alright!

 

Change subject (yes I need that)

For the first time I cooked the new beetroots soup and is amazing!

My grandma used to cook it for us, the secret lies in the beetroot (obviously 😉 but it’s important to get beetroots which come with the stems and leaves, as you need to add all of that into the soup.

 don’t bin the stems and leaves, they are eatable and very tasty

You need:

bunch of beetroots

some butter

potatoes (if you want)

single cream

lemon

I also added some dried marjoram and lemon pepper and salt

For two people you will need one bunch (3 medium beetroots with leaves, just like on the picture above) that should be enough

Wash well the leaves and stems, peal the beetroots, chop everything and chop the beetroots into squares.

Chop few potatoes into squares too (if you want, I like this soup with potatoes )

Melt some butter in the pan (I only added one spoon but you can add more)

Put the beetroots and the whole rest into the pan and pour some water to cover the whole thing. If you want it to be more liquidy add even more water.

Add salt and boil the soup on small fire.

When the vegetables are soft add some single cream…dairy and hot soups don’t join well together, to avoid soup to curdle, pour some soup into a separate cup and start adding some single cream while mixing it at the same time. Then pour it into the main pan, at the same time mix the whole thing with the spoon or eggbeater.

Add as much single cream as much you like

At the end squeeze some lemon juice (it depends how strong/sour you want teh soup to be) I add quite a lot of lemon as I like the soup to test stronger. I have added almost the whole lemon, and 1/3 cup of single cream.

The soup is amazing! It’s very light but filling. The whole cutting and cooking took me no more than 30-40 minutes. You can add some black beans too but I personally prefer without.
