A tad overdone

So because of my lack of sleep on Saturday, and working that night, whilst my dinner was simmering away on the stovetop, I fell asleep on the couch didn’t I?  So much for setting my phone alarm for two hours time at 9:45am.  I woke up at 11:55am.  Cue first thought:  "SHIT!!"  I was amazed the house hadn’t burnt down around me.  Luckily I was only simmering a roast in a pot of water, but still!  When I peered into the pot to see if my beloved silverside was alright, I saw there was VERY little water left in the bottom on the pot.  It had all evaporated away.  I quickly turned the gas off and salvaged what I could of the meal.

It was still okay.  Just a burnt bit where the roast was on the bottom on the pot, which I cut away.  Thank God I hadn’t slept a few more hours – who knows how it would’ve ended up.  Probably solidified or something.  But since there was a tiny bit of water left, the roast was succulent and very tender and (yes I still ate it) delicious =)  Nom nom nom!
I even had some for leftovers when I got home from work today.  There’s still some left.  I like that about silverside – it can feed you for days 🙂

New housemate saw me eating it when he came home this morning and asked if I liked corned beef to which I replied ‘hell yes’ and he says he makes the best corned-beef pies.  Yummo!  Who knows if I’ll get the chance to try them before he moves out though.

Anyway, so WAY overcooked my dinner, but it’s still yummy 🙂
