Recap

Well date night was an overall success even with a speed bump or two. First speed bump was a late start due to Cindi having to finish up extra paperwork since her work is transferring her to a new location today. She’s working through a contacting agency so she’s at the mercy of how long each facility needs extra staff. She knew the move was coming but suddenly on Friday they said it was the day so all the paperwork had to get done. That’s the one thing that really sucks with her job, an Occupational Therapist, is the amount of paperwork. It was made worse at this location by the fact it’s all on computer and she is not super comfortable with computer and as a contractor doesn’t get all that much training on the programs used by the facilities. But now she’s working a little closer to home and not having to trek up to Allentown everyday.

Anyway we got off about an hour late and headed down to the PF Chang’s which of course had a wait of an hour or so. But we had planned for this and it was located in an upscale shopping center, one that really is a small mall but all outside and mostly nicer shops that tries to recreate a main street shopping district. They were having a special night with music and a farmers market and such. So we walked around and mostly window shopped and took advantage of free wine tasting from a winery and at a jewelers shop.

The dinner was good and thank you for suggesting the lettuce wraps they were yummy.  We spent 5 minutes or so just trying to figure out what was in them to recreate them at home.  I think in addition to the chicken there were water chestnuts and green onion with the sauce being soy based.  I guess we’ll find out when I get the old wok out and try to make it myself.  Since the soy sauce could actually be a fish sauce the taste was hard to fully pin down.

The only downside was Cindi missed a call from the babysitter that Ella wanted to say goodnight and Cindi could Ella crying a little in the background.  We just have not had that much chance to go out so Ella is very use to at least one of use being there as she goes to bed.

Saturday we had family reunion for Cindi’s fathers side of the family at her uncles place.  It’s just outside Phoenixville Pa right on the French Creek.  That was fun since all the kids including Ella could play around in the creek and hey I even went in and had fun.

Sunday was taken up by church and then trying to get some work done around the house and yard.  Not enough got done on that front but I don’t see any point on worrying about that.  Well that’s enough boring you for now, have a great day and smile.

Don’t feel too guilty about Ella and the crying on the phone call you missed… you said yourself, date night is rare and Ella needs to learn to be dependant on herself. I’ve never tried lettuce wraps. If you tinker and think you have the recipe down pat, why don’t you post it.
