Samosas
Made samosas and curry recently. It was the goods. Here’s what I did:
First step:
2 large potatoes
Take them and just barely cover them in water, leave skins on. They taste better that way. Boil uncovered until soft, which should be by the time you’re ready to start the saute process.
Dough:
1 cup flour
2 tbls oil
pinch of salt
Mix. Add flour til it’s doughy but still a bit flaky and wonderful. Then cover with a wet cloth and set aside
Almost ready to set aside ^
Then we take this:
potatoes from before
1 small onion chopped
1 small jalapeno (or hot pepper of your choice really)
1/2 tsp ginger powder
1 tsp garlic minced
1 tsp coriander
1 1/2 tablespoon lemon juice
1/2 tsp chili powder
1 tsp tumeric
1 tsp cumin
1 tsp fenugreek
Potatoes should be done or almost done here. Peel those suckers.
Start by heating oil in a pan and then sauteing the pepper and garlic along with the ginger powder for 1 minute. Then add the onions and saute for 1 minute. Then add all the spices and saute for 2 minutes. Then add the potatoes and mix, heating for 2 minutes. Then turn off heat and set aside to cool.
Garlic and ginger. I didn’t add pepper yet because I like slightly roasty garlic. Not a lot of ppl like that though. ;x I LOVES DA CRISPEH.

The mix:
Now take the dough from before, roll it out:
Make into discs or triangles and put filling into dough, cover them up and seal them tight and fry them at 375 for one-to-two minutes. Eat.
I didn’t think to take a picture of them they were so delicious so…..yeah. No delicious for you. But here’s what samosas are supposed to look like:
They are full of the delicious.
