MAKING A CAKE
I’m baking a cake for my son’s birthday today. Baking during Passover is always a challenge and I don’t do it too often. No one wants to eat rich foods anymore. BUT tonight is his birthday and we need somewhere to stick the candles. So I am making a sponge cake. I don’t have all the necessary ingredients so will have to use substitutions which may or may not work. I am going to proceed anyways. I had potato starch but by mistake I gave my cousin both instead of one. I will use matzo meal instead and hope for the best. I also don’t have an orange or juice so will substitute wine. How can it be bad? I’ll keep you posted. While it bakes I think I’ll have a nap. My laundry is in. Only one load. I left a lot of pajama bottoms and tshirts in Florida. I have to wash too often as I change every night. I’ll have to go shopping when we go to the trailer. One or two more sets should be enough.
The sun is shining here. Have no plans to go out unless I go renew my Medicare card. Maybe I will as I have plenty of time.
I have the eggs being mixed for fifteen minutes in an old-fashioned mixing bowl. Sure seems like a long time. Wish me luck.

are you doing substitutions because of passover? Like because you can’t eat certain things? Or becasue you’re not supposed go buy the proper ingredients? *curious – saw you on the front page.
