The Way We Do It

In July we started eating specific foods in hopes of reducing Nelson’s pain due to inflammation.

We eat:
salmon (which we’ve expanded recently to include more fish)
cheese (which I have also expanded to include milk and greek yogurt)
black beans
oatmeal
eggs
super low fat burger (95% lean or greater)
chicken breast (which we also expanded to include turkey for Thanksgiving)

We eat all the fruits and veggies we want. We were also including a handful of nuts (which was a good salty snack for me) but we have discontinued it since I started to suspect the development of a new stone.

Original Broccoli Chicken Cassarole:
Chicken Breast
1c rice (Pre-cooked is best so you don’t get crunchy surprises)
1c cream soup (we’ve used chicken mostly, but have varied this)
1c mayo (we have used FF Miracle whip forever)
splash of lemon juice
Broccoli (I like to use frozen diced up broccoli)
Shredded cheese (The original recipe called for just puttin it in the mix, we put it in and on top)

Mix it all up. If everything is pre-cooked, which it usually is for us, we cook it till the cheese on top is browned and we can’t wait any longer–about 30 min.

Now to fit the plan:
Chicken breast
Miracle Whip (FF)
Broccoli
Shredded cheese
House blend of dried hot peppers from the garden and ground garlic

Mix, cook, and devour.

We don’t miss the soup or rice. I eat this for any meal or snack. It is an absolute staple in our house.
