Recipe: Cherry Almond Cheesecake Tarts

Ingredients
CRUST:
*1 1/2 cup flour
*1 cup oatmeal
*3/4 cup Splenda sweetener
*3/4 cup light margarine or Lite Bake
*1 1/2 cup fat-free sour cream
*1/2 teaspoon baking soda
FILLING:
*8 oz. fat-free cream cheese
*1/4 cup Splenda sweetener
*1/2 teaspoon almond extract
*1 egg
*1/2 cup light cherry pie filling
*sliced almonds
Instructions
1. Preheat oven to 350 degrees.
2. Mix flour, oatmeal, and splenda together. Add margarine, then mix in sour cream and baking soda.
3. Spread 2 tablespoons of the mixture into the bottom and sides of 12 large muffin cups.
4. Mix cream cheese, Splenda, and almond extract with an electric beater (on medium) until the ingredients are well combined.
5. Beat egg and mix it into cream cheese mixture. Pour the filling into the crust-lined muffin cups. Top with a few cherries and almonds.
6. Bake for 45-50 minutes.
7. Cool before serving
