Recipe: Broccoli Cornbread

Broccoli Cornbread-From Oxygen Magazine (sounds strange, but it’s actually good)

*2/3 cup flour
*2/3 cup yellow cornmeal
*1/2 tsp. salt
*2 tsp. baking powder
*4 tbsp. sugar
*1/2 cup egg substitute
*2/3 cup 1% cottage cheese, drained
*1 medium onion, finely chopped
*1/2 cup olive oil
*7 oz. frozen chopped broccoli florets, thawed and drained
*1/2 red bell pepper, chopped
*nonstick cooking spray

1. Preheat oven to 400 degrees.
2. Spray a loaf pan with nonstick cooking spray. In a medium bowl, combine first 5 ingredients.
3. In a separate bowl, mix egg substitute, cottage cheese, onion, and olive oil. Stir egg mixture into flour mixture. Fold in broccoli.
4. Pour batter into prepared pan and top with red bell pepper.
5. Place in oven and bake 35-40 minutes. After bread cools, store in refrigerator.

RYN RYMRYN: ok! ok! i was teasing!! honest. lmao, not like i don’t suggest bootlegging to some people. so, are we still on for spin class in the AM? Tina leads the class tomorrow…i liked her, she was nice to me. LOL and she was very clear and concise with her instructions and suggestions for spinning.
