Recipe: Beefy Black Bean Chili

*Chili has 7 points per 1.5 cup serving, but it’s very filling. I make a small salad with it and I’m good to go.

From the WW Simply Delicious cookbook

*2 teaspoons olive oil
*1 onion, finely chopped
*2 garlic cloves, minced
*1 tablespoon chili powder
*1 teaspoon ground cumin
*1/2 teaspoon dried oregano
*1 pound lean ground beef (10% or less fat)
*2 (14oz.) cans stewed tomatoes
*1 (19oz) can black beans, drained and rinsed
*1 (14.5oz) can of no salt added corn kernels, drained
*1 large ripe tomato, chopped
*1/4 ripe avocado, finely chopped
*32 baked tortilla chips

1. Heat the oil in a large nonstick skillet over medium heat, add the onion. Saute until softened, 3-5 minutes. Add the garlic, chili powder, cumin, and oregano. Saute, stirring constantly, 1 minute longer. Add the beef and brown, breaking apart with a spoon, about 5 minutes.

2. Stir in stewed tomatoes, beans, and corn. Simmer, uncovered, stirring occasionally, until the flavors are blended, about 20 minutes. Serve with tomato, avocado, and tortilla chips.

RYN-pizza: it was over 3 hour period, she whines….god, i have no self control around pizza. that’s why i don’t order it (while i’m alone) anymore, usually.

i have a question for you, the WW leader here says that milk counts towards your water consumption, although you still have to count the points for the milk. Ive never heard of this, have you?
