Split Pea Soup with Italian Sausage

Now, this recipe specified chorizo sausage and a slow cooker. Well, the comments on the recipe point out that the slow cooker really seemed to leave the soup way too watery, and I wanted to cook this for folks who weren’t really keen on spicy (chorizo is a Mexican sausage that often has a good kick to it, and andouille is Cajun sausage). I was also aiming for vegetarians.
So, here’s my version. Sweety and I were both impressed on how it came out. It’s going over to the clients today.
Ingredients
- 1 pound green split peas
- 10 cups vegetable broth (instead of chicken broth)
- 1/2 pound diced Tofurky Italian sausage (2 sausages), instead of chorizo or andouille
- 1 1/2 cups diced carrot
- 1 cup diced shallot
- 1 cup diced celery
- 2 cloves garlic, minced
- 2 bay leaves
- Salt and freshly ground black pepper

I use a stove-top pot instead of the slow cooker.
Put the carrots, shallots, celery and garlic in a big pot. Saute for a while to get the flavors releasing (~ 5-8 minutes?). Add the broth, split peas and bay leaves, stir well and cover. Simmer gently for like 1 hour, or 1 hour 15, until it begins to thicken a bit. Stir occasionally to keep stuff from sticking on the bottom of your pot. After it begins to thicken, add in your diced sausage (note: the meat substitutes sometimes fall apart faster than meaty-meats, so add them later. If you’re using meaty-meats, you can add them in earlier.
Season with salt and black pepper, and remove bay leaves. Freezes well for later.

Gotta say, I’m with Fishie on this one. I love, love, love chorizo and Italian sausage but just can’t stomach pea soup (even though I do like peas).

U dont need the sausage Who knows whats in em ? In some parts of Australia Pea soup is the basis of a floater Put the hot pea soup in a large soup bowl Float a hot Aussie pie on the top U get a floater to both eat and drink! Yummy Whats in an Aussie pie ? Ur ? Who knows just like sausages ?? Better U dont know ! They tasty so good ? You can add ketchup if u like ? Good cold beer cools it down

I love split pea coup. My grandfather used to make it. He put dumplings in it. I make it a few times a year. My recipe is similar to your but I add some chunky potato. I never thought of using sausage.

I just made some split pea soup the other day. I always use smoked ham hocks- or the leftover from a ham. I had a Honeybaked Ham bone in the freezer so used that. I also use chicken broth (or veggie broth) instead of plain water the recipe always calls for. I cook everything but the peas overnight in the slow cooker. Then I pick the bones out and save the meat. Vegtabletarians, of course, ignore that part. I also always use 2 packages of peas instead of one because we like it thick. When we serve up a bowl- we put a spoonful of sour cream on top. It’s the crowning glory in our eyes.

Oh- I also like to use electric mixer in the soup after the peas have cooked a couple hours to smooth it all out. Yum. I love this stuff and freeze most of it in individual servings so I can have some whenever I want. Whew- sorry for the long note. I love talking about recipes.
