Taco Chickpeas – Recipe
This one is thanks to Undressed Skeleton, whose blog I discovered yesterday and have been devouring. Unfortunately because I’m a new member OD won’t let me post links for the first 7 days (I understand it cuts down on spam diaries). You will need:
- 1 Can Drained and Rinsed Garbanzo Beans
- 1/4 Tsp Black Pepper
- 1 Tsp Olive Oil
- Taco Seasoning – I just used a package of Taco seasoning, but Undressed Skeleton offers her recipe here:
( 2 Tsp Chili Powder, 1 Tsp Paprika, 1 Tsp Cumin, 1/2 Tsp Onion powder, 1/2 tsp garlic powder, 1/8 tsp cayenne pepper) You must make your own taco seasoning unless you can find a taco seasoning that doesn’t contain milk. I was surprised to find out that milk was in most taco seasonings.
Mix together the beans, pepper and taco seasoning, then spread them out over your oiled pan. Bake them for 13-15 minutes at 300 degrees. Undressed Skeleton didn’t mention needing to stir them up or anything, but if I were to make them again I would stir them at least once, in hopes they wouldn’t stick quite so badly to the pan. I’d also leave them in the oven for a bit longer to get them more crispy. The taste is great, and they make a perfect snack to munch on.
