Looking for Pizza
Well, so far for pizza we’ve made the quinoa pizza bites and they are quite delicious and I know Ben really likes them. I like them because they are quite filling, and I love the way they get crispy. But it is still not quite the same as pizza.
So last night I thought I’d try making pizza using a tortilla crust. I made the tortillas quite thick, then put them on my pizza stone, and covered them with tomatoe sauce and regular type pizza toppings and baked them until the cheese was nice and golden brown.
They tasted good… but the crust was too heavy or something. So the search will continue. I’m sure I could probably have some luck if I just googled "gluten free pizza crust recipe" perhaps that’s the next step. But it’s fun to try new things, and it wasn’t a complete disaster at all! Kept me full for the whole evening (which is rare) so thank you pretend-pizza!
random noter – just saw you on front page re: ezekiel bread & then this post….have you heard/tried cauliflower crust pizza? i haven’t but have friend who has and she said it works good for her…she got recipe online from The Hungry Girl (cable food show) either Cooking Channel or Food Network…
