The daily grind(er)…

We are having a sausage-making party next Saturday, and today I ordered 25 lbs. of pork, 10 lbs. of pork fat and 5 lbs. of veal.  We’ll be making breakfast sausage, English bangers and sweet Italian sausage.  We’ll have two meat grinders and a sausage stuffer running at the same time, so with many hands we’ll have a nice assembly line process going.

Our plan is an afternoon of sausage making, with Lady Wife managing a sub-group on the pasta machines.  We’ll have some of the Italian sausage along with the pasta and a salad that evening.  The crowd is a group of 10 die-hard foodies, so it promises to be a fun day.

Assembly line is the only way to make sausage!

I didn’t realise that there is 33% fat in sausages.
