YUM-O!*

 So yesterday ended up being a busy day. 

I headed out with both kiddos in tow to do some grocery shopping.  I got SO much food.  Actually we went to TWO grocery stores to get it all.  (Aldi and Tops, if anyone is curious).  So anyway along with my everyday stuff I picked up some ingredients for some healthy, WW-friendly recipes that I really wanted to try.

Last night I made beef and broccoli (links to recipe).  It was AMAZING!!!!  Seriously, i don’t know if I have ever tried a recipe that i have adored more.  I am going to make this ALL THE TIME.  Well, whenever the steak is on sale, or on hand I guess.  I LOVE it!

I also tried this. (which i got from JennyJo79)

Weight Watchers brownies  

1 box Devils Food cake mix

1 small can pumpkin

Mix ingredients together with an electric mixer. Spray a 9 x 13 pan and spread in brownie mixture. Bake according to the directions on the back of the cake mix.  

Yield: 15 brownies

2 pts/serving

* Excellent served with a dallop of FF Cool Whip.

* Also delish with a little mint extract stirred into the brownies. Makes fantastic chocolate mint brownies.

Experiment with different cake mixes, too … make carrot cake bars … etc.

 

Of course these aren’t as good as regular brownies, they aren’t bad either, just different.  kind of cake-like.  but seriously they are awesome for a non-cheating chocolate treat.. AWESOME!  They will definitely help me lose this weight!

On the docket for today… oatmeal applesauce muffins and these…EDIT:  These are REALLY good!  Tip: Don’t use cupcake liners because they don’t peel off very well.. oh well, you live, you learn i guess.

WW Peanut Butter Cups

8 oz Fat Free Cool Whip

6 TBSP peanut butter

2 TBSP Hershey’s chocolate syrup

 

Combine Cool Whip and peanut butter. Line 12 cupcake tins with liners and spoon in mixture.

Top with drizzle of syrup and freeze.

 

Yield: 12

1 pt/serving

I have never tryed pumpkin before but i have tryed applesauce(instead of vegie oil) and they turned out really good.
