Jenn’s Hamburger soup

as requested, i have my recipe for hamburger soup to share.
1lb ground beef
1/2 med-large onion, chopped
3 or 4 14oz cans of beef stock
1 28oz can of diced tomatoes
3 whole carrots, sliced into circles
3 celery ribs, sliced into C-shapes
1 and 1/2 cups (about) frozen corn, heated & drained
8 tbsps barley
1 bay leaf
1 tsp. dried thyme
1 tbsp dried parsley
1 tsp salt (i add more)
1/2 tsp pepper
Brown the chopped onions & ground beef in a skillet. I sprinkle garlic
powder over it for more flavor, totally optional. When the meat is
browned and the onions are translucent, turn off heat & chop veggies.
Make sure you peel the carrots or you’ll get that strong metally taste.
When you’re done chopping & browning, throw everything into your
crock pot. If you want a thicker, more stew like soup go with 3 cans. If
you want more broth, go with 4. Put the lid on the crock pot, and set it
for either 3 Hours on High, or 6 Hours on Low.
I serve it with fresh bread. It’s really good!
