White Pork Chili (Freezer Meal)

This recipe is a bit different because I don’t actually use amounts. I just throw a bunch of things together and adjust by taste.

In roaster oven:

Put different types of white or light colored beans in your roaster oven, cover with water.

Add 1 potato cut into 1/4th (will be removed before eating). 3-4 bay leaves.

Cook until beans are almost done.

In a skillet

1-2 Diced onions
1 bunch diced celery
2-3 scoops of minced garlic
1 stick butter or plop of bacon fat or coconut oil.
Melt fat and start to cook onions and celery.
brown 1 diced pork loin (minus rib roast end).

Add meat and juices to almost cooked beans.
2-4oz chili powder based on taste.
Franks hot sauce based on taste.
2-4T Honey
1-2T molasses
Montreal Steak Seasoning.

Allow to cook until beans and meat are done. Remove potato. You can add corn if you would like.

Some times the flavors still haven’t mixed well. At this point I will usually cool (outside on a cool fall or winter night) and let sit over night and reheat it in the morning.
