E is for Eating(cooking)

Tonight on cooking with Cokeadot, Sweet and Sour Chicken and Fried Rice YUMMO, I always love taking recipes and altering them to suit my taste and needs haha, anyway I guarantee you that after you make this dish you will nevah eat at a take out restaurant again lol it’s DELISH!

These 2 dishes are kind of time consuming so only make it when you have at least 2hrs to kill lol, but it’s sooooooo well worth it =)

What You’ll need:

Sweet and Sour Chicken:
6 Chicken TaTa’s or a bag of chicken tenders( I prefer ) cut into 1 inch pieces.
Flour for coating chicken pieces
4 eggs(4 egg yolks 2 egg whites, place the other 2 egg whites aside)
Oil for frying
half an onion 1 inch chunks
1-2 Green Bell peppers cut into 1 inch chunks
1 Large can pineapple chunks save the juice

Sweet and Sour sauce:
1/2 Cup white distilled vinegar( sometimes depending on the acidity of the ketchup I’ll lesson the amount of vinegar to a little less than 1/2)
1/3 Cup Sugar(white)
1/2 tsp salt
1/4 Cup Orange Juice no pulp
1/4 Cup Pineapple Juice
1/4 Cup Ketchup
2 Tbsp Cornstarch
1 TBSP + 1 Tsp Pineapple Juice

Now Lets Begin:

Cut up your Veggies and Chicken
Mix together 4 egg yolks and two of the egg whites with 2TBS of soy sauce in a bowl, pour some flour in a container that comes with a lid or you can use a big freezer bag trust me both steps will save you time lol I also use slotted spoons so not too much egg gets in the flour and you can shake most of the excess flour off before putting the covered chicken on a plate to fry.

Dip Chicken in egg mixture then in flour while your heating you oil up in the walk you can also use a deep fryer probably be a little less time consuming lol:

Cook for 3-5 minutes turning in between or until cooked thoroughly.

While that’s cooking in between batches I mix up the sauce:

Mix everything but the 2 Tbs of cornstarch and 1Tbs + 1tsp pineapple juice mix that together in a small bowl and set aside you’ll be adding that later 🙂

After your chicken is done frying empty out the excess oil I usually place a recycled pie pan on a potholder and pour the oil in there until it cools then I toss in the trash lol anyway clean out your wok and place it back on the burner let it heat up for 15 seconds then add 1 Tbs of oil and your peppers and onion to the pan saute for 3-minutes then put veggies back in the bowl and add your sweet and sour sauce in and bring to a boil stirring occasionally.

After it’s come to a boil turn the burner down to med/low and stir in Cornstarch mixture stir until sauce is a little thick then add veggies and 1/2 cup to 1 cup pineapple chunks stir in until coated

Then add chicken, stir to coat serve hot!

Fried Rice:
1 1/2 Cups uncooked rice
3 Cups Water
4 Tbs Oil divided
3-4 Chopped green onion(or if your like me and forgot to buy some thinly chopped white onion will do)
2 Eggs + the 2 egg whites from above beat well
3-4 Tbs Soy Sauce
Salt, Pepper, Garlic Powder to taste.

Now Lets Begin:
(A little side note I like to begin cooking my rice before I start my Sweet and Sour Chicken since it has to have time to cool)
Cook rice as directed, allow to sit and cool or place in the freezer on a cookie sheet lined with waxed paper for 10-15 minutes.

Add 2 Tbs oil to pan add onion and egg and scramble breaking into small curdles place back in bowl clean out frying pan place back on burner let heat up for 15 seconds then add remaining oil to pan add cold rice, soy sauce, and seasonings mix well and fry until heated through then add scrambled egg mixture, mix well and serve.
