White Chocolate Pumpkin Drops

Our PE Coach’s fiance also works here as the reading teacher.  Today I got this e-mail from her:

"Thank you so much for the cookie recipe.  Coachie says you are the best cook in the school and that (insert other teacher’s name) has nothing on you!  I hope when I make the cookies that they live up to that reputation!  I think that they will be my contribution to the Thanksgiving holiday. "

I could almost blush if it weren’t so funny.  Best cook in the school?  OH HELL NO!  But I sure do how to come through in a pinch!  If Coachie were to have to eat my cooking every night though he’d soon change his mind about my skills!  I think the magnet on my fridge that a "friend" gave me would really summarize it.  It says……. I kiss better than I cook.  Yep.  Tis true, but not a skill that I need to show off at school!!!

So……..bragging and blushing aside………here’s the recipe for the cookies that a couple of you asked for.  ENJOY!

WHITE CHOCOLATE PUMPKIN DROPS

2 cups butter, softened
2 cups granulated sugar
1 can (16 ounces) solid pack pumpkin
2 eggs
4 cups all-purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1 bag (12 ounces) white chocolate chips
1 container (16 ounces) cream cheese frosting
1/4 cup packed brown sugar

1.  Preheat oven to 3875.  Grease cookie sheets.

2.  Beat butter and granulated sugar in large bowl until light and fluffy.  Add pumpkin and eggs; beat until smooth.  Add flour, pumpkin pie spice, baking powder and baking soda; beat just until well blended.  Stir in white chocolate chips.

3.  Drop dough by teaspoonfuls about 2 inches apart onto prepared cookie sheets.  ake about 16 minutes or until set and bottoms are brown.  Cool 1 minute on cookie sheets.  Remove to wire racks; cool.

4.  Combine frosting and brown sugar in small bowl.  Spread on warm cookies.  Decorate as desired.  (I used orange and black sprinkles).

And it seems we will have occasion to prepare these again soon.  The Superintendant of Schools will be at our school for a "Town Hall" meeting in 2 weeks.  I’ve been asked to have my students fix a little sumpthin-sumpthin for her and her entourage.  I think these cookes and a nice tea/punch of some sort will fit the bill quite nicely.

These sound delicious. I think I’ll give the recipe a miss as I haven’t seen some of the ingredients here (pumpkin pie spice, tinned pumpkin, white chocolate chips, cream cheese frosting) Also, if I made them I suspect I’d then scoff the lot! I bet yourSuperintendent of Schools will enjoy them. And it”s great for the students that they will be cooking for the visiting VIP.

RYN: I was applauding as i read that mini-rant!! I do have a few very devout Christian friends who interpret the Sermon on the Mount to mean that you do (especially women in marriage) have an obligation to remain in a relationship even when it is abusive. I totally disagree with them!
