I like meat

Let that be known, right from the get go.  I like cheeseburgers, steak, chicken, turkey (I’m drooling thinking about Thanksgiving coming up), fishes, duck, bacon, and most other tastey animals.  If you do not, don’t read on.  Just stop now.  PETA, in my book stands, for "People Eating Tastey Animals".  I believe in the whole circle of life thing.  Go tell a lion that he’s gotta become vegetarian.  He’ll tell you how much like a squash you look, as he chews on you.  Mmm-mmm! 

That being said, I also love Weight Watchers.  Nowhere does that keep me from eating meat, except that I leave my house at 6am, get back around 6pm for about an hour, then dash out 2-3 nights a week for parties until 11pm.  That’s a very long day, and as I don’t eat at parties (my stomach is not as made-of-steel as it once was, and I’m allergic to an unknown ingredient that hides itself in foods and we can’t pin point) I eat pretty much all day long the rest of the day.

I’ve come up with TONS of low point options to keep eating all day, but adding meat to a meal adds, usually, a minimum of 3-4 points to a recipe, so I usually come up with other protein options instead, and eat meat only on nights I’m home with Dread Pirate.  (He, by the way, feels vegetarians should be lined up and flogged, and vegans should be flogged, then deported.  To another planet.  He was really concerned that I was going vegetarian, until he remembered how cranky I get if I haven’t had steak in awhile.)

I’ve found a way to make an awesome stuffed peppers side dish that’s filling, tastey, and only 3 points, so I thought I’d share it with you. 

Veggie Stuffing:

3c Fresh spinach
1c Fresh basil (other herb you like better is fine too)
1c Mushrooms (I used baby bella)
10 Grape tomatoes
Heat above ingredients in a frying pan sprayed with cooking spray until leaves have wilted down.  Add to a blender/food processor/chopper type thing, and pulse blend until combined (do not puree)

Put mixture in a bowl and add in 2 tbsp garlic hummus, 1 tbsp parmesean cheese, pinch of salt, pinch of pepper.

To make peppers:

Take mini sweet peppers (about 10) or whatever kind of peppers you like, cut the tops off, remove seeds, spoon in stuffing.  Bake (in cupcake tins so they don’t tip) for 15 minutes at 375.  Mmmm!

That sounds very yummy. I need fat and protein with my meals, or I don’t get no satisfaction. Go figure. This is why I was not successful on WW. I do much better just tracking straight calories. I still go over my “recommended”, but I know that I eat much less than I would were I not logging them. Have you seen “Fiber Up, Slim Down”? I find the recipes very yummy and they help me fill the void when I’m not eating meat.

hello- i saw you on the lets get health diary. congrats on the weight loss! i just recently joined ww and can take any recipe that is healthful to fill up and not use alot of points. i love meat also and i see with meat options it adds so many points! this stuffing sounds so good!!!!!!!!!!!!!!!! i will have to try it! xxx
