Giant Double Chocolate Breakfast Cookie

Giant Double Chocolate Chip Breakfast Cookie

1 1/4 Cups granulated date sugar (I use Demerara Cane or Turbinado sugar)
   3/4 Cup brown rice syrup
2  Tbs. expeller pressed Canola oil
10 Oz Prune puree or prune baby food
4  egg whites
1 tsp. vanilla extract
3 cups old fashioned rolled oats
2 cups unprocessed bran
2 cups all-purpose flour
1 1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp salt
1/3 cup unsweetened cocoa powder
1/2 cup semi sweet chcolate chips

Preheat oven to 350.  Coat baking sheets with nonstick cooking spray. In bowl combine date suar, brown rice syrup, canola oil, prunes, egg whites and vanilla.  Add oats, bran, flour, baking soda, baking powder and salt.  Stir well.  Stir in cocoa powder and chocolate chips.  Drop 1/2 cup at a time onto prepared baking sheets.  Bake 20 minutes or until lightly golden.  remove to cooling racks.

Freeze and pop in microwave for 20 seconds to reheat.

Just a note…….It is impossible to find prune baby food……….I DO NOT know what the deal is but not one of the grocery stores in my area has baby prunes any longer.  Did I miss an outbreak of prune infection of some sort?  This last batch I added water to  pitted dried plums and made my own puree.  It was a bit thicker than normal baby food but didn’t seem to make a difference.  I really don’t think you can screw up this recipe.    The hard part will be finding the rice syrup and unprocessed bran.  I know Whole Foods does carry these and I’m sure any healthy grocer will.

*drool* Although I remember reading your recipe once (back onDP?) and thinking “date sugar? Rice syrup? Good grief!” But the ends justify the means, right? 🙂

ryn: mine’s growing up because another baby is coming and he has to be the big boy now. i hate it…but it’s true. yours will always be the baby and will probably always be treated as such. :o) and we definitely SHOULD still do a mommie’s weekend sometime. there’s always weekends alone and that kind of thing as an army wife. just cause he’s coming home won’t mean i’ll see him all the time.
