Flourless Chocolate Chip Cookies
I have a sweet tooth, and i was at a baby shower yesterday with all kinds of yummy cookies and cupcakes that I refrained from eating (VICTORY!) But when I got home I HAD to try this cookie recipe I found on pinterest:
Don’t they look just like regular chocolate chip cookies? They call for peanut butter (which we’re not supposed to eat) so while I was at Superstore yesterday I grabbed some almond butter, and thought I’d try it as a substitute.
SUCCESS! Well, Mild success. The cookies can’t be eaten with your hands, but in a bowl with a spoon and they taste great!
1 cup creamy peanut butter
¾ cup sugar
1 large egg
½ teaspoon baking powder
¼ teaspoon salt
1 cup semi-sweet chocolate chips
parchment or a silicone baking sheet
Preheat oven to 350 degrees
Stir together everything but the chips. Mix well. Add the chips and combine. Drop in tablespoonfuls on a parchment lined baking sheet. Bake for 12 to 14 minutes until puffed and slightly browned. Cool for 15 minutes
i will definitely make these again, but I don’t think 1 cup of chocolate chips is necessary (I know you can hardly believe I would say that). Next time I’d reduce the amount, and I bet they’d be just as good, perhaps they’d even stick together better.
