NoJoMo – Thanksgiving Feast

Well, I made it home in time to go to Wal-Mart to honor the Tram Law by going shopping with my wife. Spent some time there then headed out to eat then home to do a little cooking. We made a few things last night that I will share with you…well, the recipes at least. You wanna share the food, you gotta come to the family function. And, when you arrive, can you spirit me away from there?

Turtle Pumpkin Pie

1/4 cup plus 2 Tbsp. caramel ice cream topping, divided
1 HONEY MAID Graham Pie Crust
1/2 cup plus 2 Tbsp. PLANTERS Pecan Pieces, divided
1 cup cold milk
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
1 cup canned pumpkin
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

POUR 1/4 cup caramel topping into crust; sprinkle with 1/2 cup pecans.
BEAT milk, pudding mixes, pumpkin and spices with whisk until blended. Stir in 1-1/2 cups COOL WHIP. Spread into crust.
REFRIGERATE at least 1 hour. Top with remaining COOL WHIP, caramel topping and pecans just before serving.

Velveeta Fudge

1 c. (2 sticks) butter
8 oz. Velveeta Cheese
1/2 c. cocoa
2 tsp. vanilla
2 lb. powdered sugar
3/4 c. chopped nuts (optional)

Slowly melt butter and Velveeta.
Can be done in microwave. Add cocoa and vanilla.
Mix well.
Add powdered sugar and nuts.
Mix well.
This will be very stiff.
Pour into buttered 9×13 pan.
This makes about 3 pounds of very creamy and delicious fudge. Stores well.

Watergate Salad

16 oz tub Cool Whip
1 large can crushed pineapple
2 pkg. (3.4 oz ea) Pistachio pudding
1 pkg. mini marshmallows
½ cup walnuts (optional)

Mix all ingredients well in large bowl and refrigerate. Serve.

So, Gina and I made these, in addition to deviled eggs, for the Thanksgiving thing at her family’s place today. We’re going to contribute some good eats today.

YOU my friend are sooooo evil for posting PICTURES to go with the recipes. Recipes I could resist…. but the PICTURES I can’t! Oh I’m sunk. More time in the gym for me!! And NO, I wouldn’t spirit you away! Your lovely wife is glad to have you home for the holiday! We had our thanksgiving a month ago, but I’d LOVE to do it all over again..It’s just fun.

RYN: And that would be bad because???? ha! Hopefully I’ll get some use out of it too! My son got to play one while he was in the children’s hospital over the summer and he loved it. I think it kept him sane, took his mind off where he was and why.
