Another Very Yummy Variation

Yesterday was an emotionally supreme roller coaster day. I had several meltdowns. I even had the dogs concerned.

At one point I had this crazy thought: ooh, wouldn’t cranberry almond be yummy in those muffins. So I decided to try.

I didn’t have a full cup of plain Greek yogurt so I made up the difference with vanilla Greek yogurt.

I used about a cup of craisins. I didn’t actually measure this since it was the end of the bag. I just dumped them in, but it was about a cup.

Then I threw in a couple splashes of almond slivers. Half a cup maybe?

I backed off just a wee bit on the oats because I thought I remembered somewhere that you were supposed to do that when you added nuts to a recipe. It didn’t seem to hurt the consistency of the muffin at all. In fact I may just do that in all my recipes.

Nelson deemed this new creation the best so far.

It’s so fun to play in the kitchen. And all the more when something actually turns out well. 🙂

Hmmm, I have craisins, slivered almonds and Greek yogurt. I may whip up a batch as they sound very good.
