Good new veg recipe… tastes sooo good

Okay so I was looking through my hair album and came across one of my friends  and she had this tasty looking recipe so I tried it out myself and BABY it was sooo good it’ll make you slap yo step sister lol. I must tell her how great it turned out. And I actually made enought to prepackage and put up for lunch the rest of this week. Can you say awesome?!?! -It tasted so good I took a picture of it and I wish I would’ve taken some of my family eating because it was so good they were raving about it the whole time they were eating. and it was completely vegetarian. No meat. well except for the cheese but who really gets that technical about being vegan? I know I don’t  lol.  well here’s a picture of it and  the recipe is posted below.

 

Baked Penne with Roasted Vegetables

Here is the Recipe and the directions. Enjoy this deliciouse dish because I sure did.
2 red peppers, cored and cut into 1-inch wide strips
2 zucchini, quartered lengthwise and cut into 1-inch cubes
2 summer squash, quartered lengthwise and cut into 1-inch cubes
4 cremini mushrooms, halved
1 yellow onion, peeled and sliced into 1-inch strips
1/4 cup extra-virgin olive oil
1 teaspoon salt, divided
1 teaspoon freshly ground black pepper, divided
1 tablespoon dried Italian herb mix or herbs de Provence
1 pound penne pasta
3 cups marinara sauce (store bought or homemade)
1 cup grated fontina cheese
1/2 cup grated smoked mozzarella
1 1/2 cups frozen peas, thawed
1/4 cup grated Parmesan, plus 1/3 cup for topping
2 tablespoons butter, cut into small pieces

 

Preheat the oven to 450 degrees F.
On a baking sheet, toss the peppers, zucchini, squash, mushrooms, and onions with olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and dried herbs. Roast until tender, about 15 minutes.

Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook for about 6 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander.

In a large bowl, toss the drained pasta with the roasted vegetables, marinara sauce, cheeses, peas, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Using a wooden spoon, gently mix, until all the pasta is coated with the sauce and the ingredients are combined.

Pour the pasta into a greased 9 by 13-inch pan. Top with the remaining 1/3 cup Parmesan and butter pieces. Bake until top is golden and cheese melts, about 25 minutes.

And guess what I went running today! Yayy me. Got in 4.55 miles with my Aunt we went walking today and I’ve been tracking my points rather good yesterday and today. The days before that I’d rather not comment on lol. But all is well there.  Over the weekend my DD had a cheerleading competition that I am SOOOOOO glad is now over. They came in 3rd place so yayyy Tigers. I’m so proud of her. She also had a JBQ tournament on Saturday that she came in 7th place for. Lil Quincy is too young to compete in JBQ but he is the best we have on our teams so he is really sad about that but I told him in 2 years he will be beating out the competition with no problems lol. I will post a couple of pictures from her tournament below.

I swear i can never get him to just smile for a pic he LOVES to pose and act silly. Sister on the other hand LLOOOVEESSS to pose as you can see above lol.
