Arroz Con Pollo
Today Hubby and I got up at 6AM and straight into our busy day. Last night we had a downpour! The town was hit by torrential rains followed by lightning and an electrical storm. There was a leak in our room so we had to get out the bukets to catch the drips! It stopped around midnight so we were lucky. There was no major damage and the water wasn’t too severe to damage anything.
Today I set about cooking Arroz con Pollo for my Father-In-Law and me. It came out quite nice being the first time I’ve tried cooking the dish. This was my favourite Spanish dish and Mum made it often. Here I don’t have the Bijol that tints the rice yellow or the Goya Sofrito which flavours the chicken but I made some improvishions and used saffron threads from Spain to colour the rice and used tomatoe paste, Bayleaves, salt, olvie oil, garlic, sauteed onions , beer, cooking wine and pepper to taste. It came out alright. My Dad-In-Law liked it cause he had seconds.
Today I received a letter from the Bodleian Library saying that they had quite a number of applicants and the selection committee has chosen their candidates and that I wasn’t chosen. This disappointed me a great deal, yet Hubby told me not to worry or feel disenhartened. He said I am under no pressure to find a job here and he doesn’t mind if I don’t work. He says he’ll work for both of us! I merely wanted a part-time job to have something to do, feel a bit satisfied and successful and help out. I still have the NSH job that I’ve applied for as an Administrative Clerk. My sister-In-Law Sue said that the NSH takes ages to process the applications but that the job is mine and she helped me by putting in a good word for me.
Today I received an E-mail from my good friend, Ivonne, our lively Maid of Honour at our wedding who helped me a great deal with the preparations of the Wedding, making the favours and keeping me on my toes. She’s lovely! She never dessuades you or talks you out of what you want to do and sees things in a possitive light! She said this about my other friend, Eleine:

She’s right! I am a Big Woman and know what is best for me and Hubby! She’s write that it isn’t Eleine’s business! She’s right in saying that Eleine doesn’t understand.
I’ve going to be watching the Sweeny tonight with Hubby and a programme about the Worse Weather Disasters! I enjoy this other programme named ‘A bottle of Larga and a packet of crisps.
