Easy supper

Dear Diary,

Epidural of steroids in back today.  Very ouchy and very tired.  One hungry hunk and one hungry boy to feed.  Oh and me – I want comfort food. 

Take three chicken breasts and either; bash the shit out of them, or if back does not permit the first slice almost -but not quite – in half. 

Open them out.

Put on large basil leaf in each breast – if you don’t have I can’t really see it mattering.

Take a ball or two of cheapo mozerella, slice and lay down the centre.  Roll them up and then cover each with one slice poscuitto and one slice serrano. Stab them with a few cocktail sticks (pre soaked in water – stops them burning) to keep them together.

Seal outside briefly in a griddle pan or frying pan and then bung in an ovenproof dish, cover with foil or lid and bake for 15-20 mins at 170C an assist so 190C normal and around gas Mark 5. 

At the same time with you multiple hands bung on some pasta in boiling salted water.  

Dice an onion and bung in a pan with a slosh of olive oil.  Finely slice a pepper and bung that in. A few chillis deseeded and chopped are nice, a courgette or a few mushrooms would be nice too.  Soften then crush in a few cloves of garlic.  I like garlic lots and use 3.  Fry of briefly then add can off chopped toms.  Simmer until pasta and chicken is ready.

Chicken out, cocktail sticks pulled and chicken plated.  Pasta drained and bunged in with the tomatoey mix.  Dollops on each plate.  

Parmesan gated on top.

Crash on sofa and wash down with a glass of Sauvignon blanc….take painkillers as an accompaniment. 

Make other people clear table and wash up, and suggest they refill your glass and make you a hot water bottle.  

Crash on sofa underneath a kindly donated Action Man duvet and scribble in here about food 🙂

Sounds amazing. Especially since there are no pork products and no wine here! By the way, I left Facebook and set up a new anonymous account so I could leave behind some unsavoury people (namely by father!) but would love to add you back. May I look for you?

I’m going to love these entries. Have you heard of the film Julie/Julia. It’s Julie Powell who kept a blog doing Julia Child’s recipes for a year. She’s now got her own book out and so on. Hope your back gives you some respite soon. Back pain is miserable.

RYN: Nope….no alcohol allowed! Tis a dry country! I moved to a goddamn dry country! Re your other note: There is no postal service here (there are no addresses!) so no Brit packs for me! I might be able to have something sent by courier but I imagine it will cost a small fortune. There are some things I miss a hell of a lot but bacon and cider wouldn’t arrive if I sent them! And anything else I seem to be learning to live without. Home for a bit in September so will bring back some bits and bobs then!
