The good thing about having to write on my phone rather than the desktop computer is that I get to recline on the couch while doing so.
The bad part is, here I can hear the window dripping. I hope the drips are on the far outside. Last winter this window half-filled with ice (it’s a double window, so between the two window sections…)
I liked the idea of today’s nojomo prompt – writing a letter to yourself 10 years ago. But instead, I tried to write one for the future, one that will actually get read. And I wrote it to Baby-A rather than me. Problem was, I kept getting all confused, the whole letter makes no sense. I’ll have to give it another try. Don’t know if I’d actually post it here or not, but it is an interesting writing exercise.
Last night’s soup was so good. Jake described it as “fancy-restaurant smooth.” Normally I get too hungry so I give up on waiting for the sweet potatoes to 100% fully soften (I probably get to 95%, good enough). But I had it made and sitting, waiting, by 4pm in case Jake didn’t get lunch and came home from work ravenous. Thankfully he had eaten, but it was really nice to just need a quick stoval reheat.
Our power went off last night at about 8pm. It flickered for a while, went off and came back, and then was gone for good. I assume/d it was out because they were working on restoring other’s power, so it didn’t bother me at all. It was nice to eat dessert by torchlight and then go to bed early. No parking-lot evil light that doesn’t go out until 11:06 that normally keeps me up. Yay! Power came back at about 4am, internet did not join it. BLAH.
My afternoon has been spent scanning pages I had ripped out of magazines – recipes mostly. The scanner decided to make terrible grinding noises each time, so after 183 times, I had a touch of a headache. That’s the reason for my being couchy right now.
Would it be weird or genius (or both) to freeze leftover coconut milk in a mini muffin tin? Both our ice cube trays are busy. It really bugs me that we can only find gigantic (13.5oz) cans of the stuff, we barely need half when we use it. Mmm, thai green curry means rice which means creme rice with the leftovers, which means Yay! Very Happy Sezzie!
Actually if you do freeze the coconut milk and it works out OK, I’d like to know about it. Like you, I have a favorite recipe or two that calls for much less milk than I can buy in a can.

Just because you freeze the coconut milk in a mini muffin tin doesn’t mean it has to stay in it. Little things can be put into a freezer bag once set.
