Walnut Banana Bread….

okay first off you all might be wondering why i’m posting a recipe on here…well i decided that i want to be more of an avid poster on here…and there isn’t much i do outside of working with my daycare kids, helping my daughter with everyday life stuff and a few of my hobbies….which frankly if i wrote about those everyday, well you’d all be bored to tears…if you actually read the entry lol….so i decided that since my daughter bought me this cook book for Christmas, I would make each recipe in it and post about it…and maybe someone would want to try it as well…or even invest in the cookbook…which i absolutely love! so anyway onto the recipe!
The recipe is on page 284 and is enough batter for one 9-inch loaf… but i made it into muffins…as to my daughter’s request lol…
what you’ll need:
1 1/4 cups mashed ripe bananas (2 large or 3 medium)
1 cup sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon of vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup chopped walnuts, lightly toasted (or you can use chocolate chips instead)
Step 1: place a rack in the bottom third of the oven and preheat to 350*F. Grease a 9 by 5-inch loaf pan with butter, oil or cooking spray
Step 2: in a large bowl, whisk together the bananas, sugar, oil, eggs, and vanilla. In a medium bowl, whisk together the flour, baking powder, salt and baking soda. using a rubber spatula, gently fold the flour mixture into the banana mixture just to combine. Stir in the walnuts (or chocolate chips). Pour the batter into the prepared loaf pan and smooth the top.
Step 3: bake until a toothpick inserted into the center comes out clean an dthe top is golden brown, 1 hour and 10 minutes to 1 hour and 15 minutes. Let cool in the pan on a wire rack for 10 minutes. Then pop the bread out of the pan and let cool completely on the rack before slicing and serving.
okay so obvosuly i didn’t follow the recipe completely because i made muffins…. i used silicone muffin molds (my momma got me one day) and it only took about 15-20 minutes for the muffins to be done….but it could take longer if you use traditional muffin tins and paper wraps…
the only other thing that i did different, is after i began making the batter i realized i didn’t have any vanilla extract left, so i left it out…they still turned out great…so great in fact that my daughter asked if i would make these for her valentine’s day party at school lol!
So overall i am completely happy with this recipe, although i would have loved to made it correctly lol….but really not having the vanilla didn’t make it taste horrible! on a side note, this is the first time i have used the silicone baking cups, and let me tell you, i love them! i believe i will be investing in a few more of those!
