Supporting student chefs…

I now have a Lincoln Town Car from Avis and feel much more in my element.  Over dinner last night we imagined that the people who drive the previous automotive monstrosity are the types who:

  • Don’t own any shirts with buttons, and see t-shirts as all-occasion wear.
  • Drink Budweiser directly from the can or bottle.
  • Are conversant with the finer points of bowling.
  • Have at least one large, highly-visible tattoo.
  • Feel in their element in a single wide.
  • Are NASCAR fans.

Speaking of last night’s dinner, I was pleased to discover that Metropolitan Community College in Omaha has a culinary arts program, and a student bistro.  This is a great way to enjoy an excellent, affordable meal and support future chefs in the making.

Dinner started with an amuse-gueule of Pork Belly with butternut squash, apple chutney and cranberry gastrique.  One bite of paradise.  I then enjoyed the Tea Smoked Duck, followed by the Cocoa Braised Short Ribs, and finished with a Bread Pudding with dried cherries.  That and two glasses of wine came to $44.  Quite the bargain!

RYN Sure, I’d say so but – in France at least – it’s the culinary equivalent complimenting the chef’s “bouffe” and that wouldn’t go down well! I’ve never seen amuse-gueule here; it may be more accepted in Canada.
