Christmas Dinner

 Christmas Feasting! this one is a tribute to MFK Fisher my all-time favorite author and writer on all things human. Part of what makes this fun is that I never get to go all out on cooking, as my kids just crush the life out of culinary exploration, my kids are more in the line of Nuggets and tatter tots…however my heart is more in line with "Like water for chocolate" sadly loving to cook and having nobody to eat the creation is like being all dressed up for prom and then standing at the wall waiting for somebody to ask you to dance. 
So The Christmas feast menu is set, and I am so excited. A qoute that prefaces one of MFK Fisher’s books has been resonating and I loosely paraphrase when I say "for one to be happy, one must know the measure of one’s powers, enjoy the fruits of one’s passions, and to do rightly" which I think the qoute is attributed to one Santayana whoever that is (I should look him up I guess..)

So the menu is:
Appetizers:
White sturgeon caviar on toast points with creme fraiche.
Foie Gras pate avec magret de canard (goose liver pate with smoke duck breast)
I am excited about the foie gras pate as I made it myself from scratch and it is currently aging in my fridge to a suitably Gallic putrescence (yes that word is correct) 
Italian Black truffles with walnut oil drizzled over smoked salmon
and fig confit!
Blue Point Oysters with sea salt and ice.

For Dinner:
Osso Bucco (braised veal shanks) with roasted vegetables served over Spatzel (which is a German pasta made with potato flour) made with smoked duck bacon for the fats.
Albino Asparagus with truffle butter
Braised Red cabbage with vinnegrette
and Fresh rolls

For Dessert:
Poached Pears with a cognac, chinese 5 spice and ginger caramel sauce.

and chocolate/almond cake known as Sacher Torte ala the famous Sacher Hotel with a twist that shall go unnamed…

I am hoping to get more family there and to the family that cannot attend I will miss you greatly and will lament the loss of company in the kitchen and at the table!!
To those who are there, come with an empty stomach and a full heart, for I will "serve it forth!"
