Ice Cream – Complete with Recipe

June is “National Dairy Month.” It is recommended that you get 2-3 servings of dairy each day. These servings can be in the form of a variety of milk products. Write a descriptive paragraph about your favorite dairy product. If you are lactose intolerant or have lactose issues, write a paragraph about your favorite dairy substitute or what you miss most about dairy.
Well, like a lot of people I like dairy but it does not like me. I am mildly lactose intolerant, so I tend to get ill if I eat too much, but I can have dairy.
Since it is hot and it is summer, go figure my mind is on ice-cream 🙂 The best ice-cream in homemade, and in my life I have used three different methods: electronic ice-cream maker, hand crank ice cream maker, and kick-the-can ice-cream at summer camp.
Kick The Can Ice Cream Recipe
1 pound coffee can
3/4 cup whole milk
1 cup cream
1/3 cup sugar
1/2 tsp. vanilla
3 pound coffee can
crushed ice
3/4 cup rock salt
Duct tape
Combine ingredients, mixing together well, except the ice and rock salt. Place in 1 pound coffee can and place inside the 3 pound coffee can. Place ice and rock salt inside large can, surrounding the smaller can. Seal both cans tightly with the duct tape. Kick the can for at least 15 minutes (much easier if you have friends help)
The anticipation on a hot day, mixing all the ingredients together, can make your skin feel like it is crawling – you can feel every layer of sunscreen and bug spray, caked on in disgusting layers. Anything to be released from that extra skin, that heaviness. Watching as the lid it taped on, and everyone is ready to play. It’s hard to play soccer with a cylinder, but you always manage, knowing that the prize at the end of the match is more than worth the frustrations of chasing the drunken “ball” all over the field.
Then, to crack up the silver egg, revealing the cold, sweet heart, frozen in a matter of minutes. To dip the spoon in the first time – the excitement and reverence in the knowledge that from simple things comes the most treasured gift of childhood. It tastes sweeter, richer than any other form because you made it yourself, in joy and in happiness.
Long ago I decided summer tastes like vanilla and sweet cream, frozen and a little runny, but ever so satisfying.
