Daily Menu: 4/24 **recipe**

Today was “Bring Your Sons and Daughters to Work” Day. As part of the activities committee, I had to split babysitting duty with the other members. I passed up the Krispy Kreme breakfast, pizza lunch, and ice cream snack (and we wonder why our kids are overweight). My coworkers were in awe of my dedication to the lifestyle. Hello? After 2 years, I no longer break into a sweat around junk food. LOL Vanity can conquer all.

I love zucchini bread…and this recipe is the bomb!

*2 cups shredded zucchini
*3 cups all-purpose flour
*1 3/4 cups sugar
*1 teaspoon baking soda
*1 teaspoon salt
*1 teaspoon ground cinnamon
*1/4 teaspoon baking powder
*3/4 cup applesauce
*1/2 cup egg substitute
*1/3 cup vegetable oil
*1 tablespoon vanilla extract
*cooking spray

1. Preheat oven to 350 degrees.
2. Place zucchini on several layers of paper towels; cover with additional paper towels. Let stand 5 minutes, pressing down ocasionally. Set aside.
3. Combine flour and next 5 ingredients in a large bowl; make a well in center of mixture. Combine zucchini, applesauce, egg substitute, oil, and vanilla; add to dry ingredients, stirring until moist.
4. Divide batter evenly between (2) 7.5-x-3-inch loaf pans coated with cooking spray. Bake at 350 degrees for 1 hour and 15 minutes or until a toothpick inserted in center comes out clean. Let cool in pans 10 minutes on a wire rack; remove from pans. Let cool completely on wire rack. Yield: 2 loaves, 14 servings per loaf (serving size: 1 slice).

14 slices per loaf? must be small slices. Some of the recipes in Cooking light, such as the cakes serve 20. Can you imagine?

I on the other hand fall victim to warm krispy kremes. I’m waaay weaker than you! Good job though! I’m going to have to try this recipe.

Vanity can conquer all!! Ha, you rock. I love that. And can I also say that Nature Valley granola bars are the best thing on EARTH?! Especially the PB ones.

Mmmmmmm … *licks lips* That zucchini bread sounds AWESOME! I’ll definitely have to give it a try in a few months when zucchini’s are plentiful around here … 🙂
