Home with the boys, making supper…

I worked 5 days in a row recently, and finished that run off with an eleven hour shift on New Year’s Day. It was something that I don’t think I will be doing again next year, because for the last three hours of that shift, want to know how many calls I took. Zero. Ziltch. Nadda. El Zippo. Not a single call. I spent the last three hours making stat holiday pay to watch South Park episodes on You Tube. Sweet…

I had Tuesday off and today as well… so I’ve been enjoying some time at home with the kids. I also went to an eye specialist to get a check up on my eye, and the inflamation seems to be almost gone. But the pupil is still stuck, and the dialator isn’t working. So we’re upping the dosage and hopefully that will stir it loose. Either than that, I’m doing all right health wise.

Leah and I had a long talk last night, and this one had a lot of harsh words… but it was good to get them out and in the open. After about an hour or so, I got Leah to read the entires I had posted earlier this week, but I think the notes left made a greater impact on her. We made some definite progress today, and I hope this is for the better.

So today to celebrate that, I’ve got the Crock Pot taken out and I’m making something new and special for Leah, Chris and the kids. There wasn’t much to work with in the kitchen, but I managed to find a recipe online that I could use with what little means I had. Here is what I’m making right now on the pot:

Crockpot Chicken Parmigiana:

Ingredients:

– 3 Chicken breasts
– 1 Egg
– 1 t Salt
– 1/4 ts Pepper
– 1 c Dry bread crumbs
– 1 1/4 c Butter
– 1 cn Pizza sauce — 10 1/2 oz
– 6 slices Mozarella cheese
– Parmesan cheese

Directions:

– If using whole chicken breasts, cut in to halves.
– In bowl beat egg salt and pepper dip chicken into egg… Then coat with crumbs.
– In large skillet saute chicken in butter.
– Arrange chicken in pot and pour pizza sauce over chicken
– Cover and cook on low 6 to 8 hours.
– Add mozzarella cheese, sprinkle parmesan cheese on top, then cover and cook 15 minutes

This makes makes 6 servings, but I of course altered it a bit based on what I had here. Instead of Pizza sauce, I used Spagetti sause, but that’s not much of a difference. I also used boneless, skinless breasts and I used five. I also cut the amount of butter in half… cause that seemed like just too much. I’ve got a ton of Mozza, but little or no parmesan, so I’ll go heavy with the Mozza to make up for it too.

I hope that Chris and Leah like it. Just in case the kids don’t like it, I will be baking some chicken fingers and fries as a backup…. cause I know this might be too much for them. If they do like it, I’ll save the fingers and fries for tomorrow’s lunch for the kids. So that’s my day right now. Hope everyone else is having a good Wednesday and I’ll be around…

You know, they just don’t sell crock pots here. I have no idea why. This sounds pretty good though. And since I spent 5 years working in an Italian kitchen, I would probably make my own sauce.

Oooh, a crockpot recipe! I might have to try that one. Think that you can convince your friend Zaphod to spill the beans on how he’d/she’d make that sauce to go with it? 🙂 Glad that you and Leah are talking; that can only help in the long run, even if it’s painful at the time. I’m rooting for you both. *hugs two of you*

ryn: the article describes how most min wage workers are young people doing it part-time, and get raises a few months after starting. Min wage is merely an entry-level wage and job that more often than not leads to higher prospects in the future. It’s not like they stay like that forever.
