MAKING POTATO LATKES (PANCAKES)

Hubby is frying potato pancakes on our large griddle as I sit here and type. I don’t want to be looking over his shoulder as everyone works differently. I prepared the mixture and he’s doing the frying. This is the first time I ever made potato pancakes days before the party. I will freeze them but not even sure if I have to as the party is Wednesday night. As they say better safe then sorry. They are delicious and I already had two or three. It’s so easy to lose track!

My niece is walking over soon with her brand new baby. She’s been here all week but I haven’t had a chance to see her yet. I’ve been so busy preparing for the party. It’s a major undertaking!

Tonight we have a show. MIKE BURNSTYN! A comedian. I hope he’s good.

This is our 45th wedding anniversary. Can you imagine? We will celebrate tomorroe night. Hubby is not one for cards so I am use to it.

Better go as I don’t want to be typing when they arrive.
