GOD’S MIND GAMES ********
So far today it is beautiful out with temperatures due to rise close to 50m degrees. Still as nice as it is God still plays games with my mind. I guess since HE gave it to me that is his prerogative. HE tempts me to go get the car washed as it has so many layers of salt on it that it resembles a pretzel. The small print in the weather report is that tonight we are due to have some rain showers so any wash job will be erased. I think that if this is the worst of my complaints for the day that I have it pretty darn good.
Next week is shaping up to be a very cold week but there is still hope for modification. I am getting used to being able to moderate the house temperature without excessive heating costs.
Last night when I got to the house after work I happened on a recipe for baked ziti. I had an urge for Pasta so went looking in cookbooks until I saw this one. It was so simple I tried it and it was delicious. I took a recipe for 4 full servings and modified it for my own use. I used a round 9 “ pie tin as a baking pan and foil to cover and was quite proud of myself. After cooking the Ziti I mixed it with a jar of Meat Sauce ( not heated ) , 4 oz. of shredded Mozzarella cheese and then the rest of the Ziti on top. I baked in a 350 oven for 15 minutes and then removed it and took the foil off. I sprinkled the dish with ¼ cup of grated parmesan cheese and topped with mozzarella cheese. I had used ½ of an 8 oz bag to start and this was the remainder. I put it back in the 350 oven for 10 minutes uncovered.
Here is where I personalized the dish. After the 10 minutes and the cheese had melted I turned the oven onto BROIL and kept checking the top until there were a few dark brown Zitis and more less well done on top. I like crispy and in fact even order Pizza well done. If I was making this for other than myself I might make my own Meat Sauce using chopped beef to add more body to the sauce and flavor but for last night the Ragu worked fine.
ahhh. the sweet delight of preparing a meal at home! well done! (smirk) i taught my kids to pun and by the time they were 4 they pun ished me severely! (((laughs at self))

i just i fixed some lemon chicken. got 7 servings in baggies in a freezer bag in the freezer. building up a bit of frozen meals so i don’t have to cook unless i want to. i’m not looking forward to next week with it being so cold. how exactly are you moderating your home temperature without excessive cost? i’m so tempted to get my car washed tomorrow just to get all the salt off of it. dont’ care if it gets rain spots on it. take care,
